Happy Birthday, Dr. Seuss (a few days late)!

Well, the days are eluding me again. I meant to post ON Dr. Seuss' birthday, but lack of sleep (thanks to the new baby) has my days all messed up. But better late than never ... here's a throw-back to last year's Dr. Seuss Day.


From the book "Green Eggs and Ham", there are pesto-filled deviled eggs and spinach-and-ham roll-ups.

A silicone cup of rainbow-colored goldfish represents the book "One Fish, Two Fish, Red Fish, Blue Fish". By the way, there are no blue fish amongst the colored goldfish. Like I said, it's a representation. :)

"The Cat in the Hat" (my Dad's favorite book to read to my kiddos) is shown by a "hat" of mozzarella cheese and red pepper stacked on a toothpick. Bookending the Cat's hat are Thing One and Thing Two, made of strawberries topped with blue frosting.

Super Bowl 2015: Seahawks Bento Lunch

Today's lunch is dedicated to the Seattle Seahawks. All across my city, homes and businesses alike are showing their support for the Seahawks by raising #12 flags. At night, the skyline is lit up with green and blue atop the skyscrapers. It's really pretty.


Nestled among blueberries, a football-shaped egg is careening towards the cheddar-cheese-stick field goal post, which is situated atop baby spinach.

On the bottom half of the bento box, a jicama #12 sits on top more green and blue - broccoli florets and blue corn chips.

Come back later this week to see how to make your own #12 out of jicama. Hint: it's pretty easy!

Super Bowl 2015: Patriots Bento Lunch

Although I live in Seattle, and therefore am a Seahawks fan by default, I also want to acknowledge our Super Bowl opponent, the Patriots. Which is why today's bento lunch features the colors of the New England Patriots.


Any football fan, or anyone following the recent games leading up to the Super Bowl, will recognize the Patriots' colors as being red, white and blue. The red is represented by strawberries and red bell peppers, while the blue is acknowledged with blue corn chips and blueberries. Sticks of jicama constitute the white portion of the Patriots' colors.

A football-shaped egg (protein) is headed towards a field goal post made from cheddar cheese sticks (dairy).

Next week, I will feature a new Seahawks bento lunch, as well as a later post on how to make #12 out of a veggie. SEA ... HAWKS!

Quick and healthy bento

Sometimes, life hands you lemons, and in the midst of trying to make lemonade from those lemons, life goes on, and school lunches still need to be made. What the heck am I talking about? Well, over Christmas break, along with my entire family getting sick, I developed bronchitis, the severe coughing of which illness bruised my rib. The only way to heal a rib = rest. So I am not allowed to do pretty much anything, except breathe, sit, rest and sleep. I can't grocery shop. I can't vacuum. I can't make meals. I can't do diddly-squat. (But a major shout out to my awesome husband, who has taken care of me and the kids and the household. Love you, Babe!)

However, the kids went back to school today (hooray!). And I needed something for their lunches. Remember how I said I couldn't grocery shop? Therefore, there wasn't a huge of variety of lunch-type items in our house. But I managed to pull together a relatively healthy lunch out of what was left-over from the holiday munchies.


Today's lunch consisted of:
Roasted Garlic Triscuits (grain)
Baby carrots, broccoli florets, snipes and celery sticks (lots of veggies)
String cheese (dairy)
Costco's fruit and nut trail mix (fruits and protein)

Don't think that you can't make a quick and healthy lunch. Just look around at what you have, and put it together. It doesn't have to be Pinterest-worthy; mine aren't! Healthy and do-able - let's all aim for that goal this new year!

Reviews of TJ's December Fearless Flyer items

On Monday's post, I promised our family's reviews of the Trader Joe's products that we tried. All of which were found in the December Fearless Flyer - I wonder why they call it that. Hmm.

For snack at school, I packed Cinnamon Apple Sticks. They are crunchy, with a hint of apple flavor. LoveBug LOVED them, but SuperBoy didn't like them. Oh well, more for LoveBug.


The Multigrain Pita Bite Crackers were a hit with everyone. Personally, I wouldn't say that they reminded me much of pitas, but they were tasty as a cracker nonetheless.


Unexpected Cheddar - Trader Joe's describes it as such: "The smooth creaminess of the Cheddar gives way to a tangy flavor and slightly crumbly texture, a subtle hint of salt crystallization is discovered, and it begins to taste like an aged Parmesan." That description seemed to hold true for our family. A definite "keeper".


The Spinach & Kale Bites were a bit of a gamble. I mean it's practically pure veggies that I was putting in a kid-friendly lunch. LoveBug said they weren't her favorite, and SuperBoy declared them "okay"; however, he wasn't feeling the greatest that day, so I don't know if his opinion counts. :) Hubby and I LOVED these veggie bites. They are definitely better hot out of the oven or warmed in the microwave, but still pretty tasty when they are cold. And I will tell you that they could use a sprinkling of salt. But yum, yum, yummy!


Southwestern Style Chicken Poppers - When I first read about these in the Fearless Flyer, I figured that they were boneless chicken wings with a southwest kick. Nope, I was wrong. Here's how Trader Joe's describes them: We took "the black bean-corn combo made delicious in our Cowboy Caviar Salsa ... added diced white meat chicken, jack cheese, spinach, and southwestern style seasonings, then rolled it all up in a crunchy and colorful tortilla chip crust." It is delicious. LoveBug, Hubby and I could have these poppers in our lunches almost everyday. Good hot or cold. LoveBug said that these poppers were the best part of her lunch, apart from the Candy Cane Joe-Joe of course. :)


The most-anticipated part of the packed lunch ... the Candy Cane Joe-Joe. What is that, you might ask? It's like an Oreo, with a creamy, peppermint-flavored filling, studded with candy cane pieces. And these are only in stock at Trader Joe's in December.
Also, highly anticipated in our household are the Chocolate-Covered Candy Cane Joe-Joe's - oh pure deliciousness!

Today's lunch is brought to you by Trader Joe's December Fearless Flyer. Oftentimes, we tend to get into a rut, in this case, a "same-ole, same-ole lunch rut". That is why I enjoy when Trader Joe's Fearless Flyer shows up in my mailbox. I peruse it for some "Out-of-the-Lunchbox" inspiration!

Thanksgiving Left-Overs

Ah yes, Turkey Day is over, but your left-overs might not be over. Personally, my family ADORES left-overs. Usually, I roast a HUGE turkey (about 20-22#), so that we have plenty of left-overs for turkey sandwiches and turkey noodle soup. But this time, I gladly let my mom-in-love cook a few turkey breasts in a crockpot; it turned out great- I didn't know you could do that! But the downside is that we don't have many left-overs. But if you do, here's a tip ... pack them up for a to-go lunch!


This lunch depends on what left-overs you have in your frig. Here is what I had around:
* Broccoli - on Thanksgiving, I roasted it (400-degrees for 20 minutes), but for the lunch, I left it crunchy and raw.
* Turkey - of course! Sliced and ready for nibbling.
* Cranberry-Orange Sauce - by Tyler Florence. It's SO easy to make! Delicious hot or cold. Can you tell I LOVE this recipe? I made it 3x in the past 2 weeks.
* Cheesy Mashed Potato Puffs - a great way to make-over left-over mashed potatoes.
* Black olives - the perfect accessory for fingers. Have you ever tried it? It's much more fun that way.
* Slice of sourdough baguette

Pack a cute, little pick or fork, and tada ... Thanksgiving Left-Overs lunch is served!

All Things Autumn ... a Kid Review of TJ's foods

Wow, it has been quite the week, as you can surmise by my one-day-delayed posts! Anyways, here are the reviews by my kiddos on the Trader Joe's foods featured in Tuesday's Autumn Lunch.


The Organic Applesauce Cups are kid-approved! I tried one myself, and they taste just like good ole applesauce. It's a winner.

Unfortunately, the Honey Roasted Pumpkin Ravioli was not a success. LoveBug ate them but didn't enjoy them; SuperBoy tasted them and didn't eat any more. I tasted a few bites, and although I'm a pumpkin-lover, I didn't think they were all that great. The filling was supposed to be pumpkin and ricotta; however, all you tasted was pumpkin. And while the pasta part was beautifully colored, it lacked in flavor. A thumbs down overall.

Pumpkin Joe Joe's were a hit. Definitely pumpkin-y, a little too sweet for me, but kid-approved for sure.

Mixed reviews on Roasted Mashed Sweet Potatoes. LoveBug thought they were good; SuperBoy did not prefer them. Personally, I loved them. I loved the taste and texture, and I adore how easy it is to make them. A few orange pucks in the microwave for a few minutes, and presto ... a veggie is served!

Toscana Cheese with Cinnamon - I am seriously surprised at myself, that I actually packed this delightful cheese in the kids' lunches, instead of keeping it for myself! It's that good! And of course, my cheesemongers loved it. I mean, what's not to love - hard, nutty-tasting cheese with a touch of cinnamon. Oh yum!

Lastly, my kids have snacktime in their classroom each morning, so I pack a snack into their lunchboxes for that very purpose. These "This Pumpkin Walks into a Bar" bars are the perfect item. In fact, my kids loved them so much, that I never got to take a nibble. And I guess that's an okay thing.

Trader Joe's Autumn Lunch

The original plan was to make a Trader Joe's PUMPKIN lunch, filled with all things pumpkin as advertised in the October Fearless Flyer. However, when SuperBoy and I finally got to Trader Joe's mid-month, half of the coveted pumpkin foods were already gone. Wow, people must love pumpkin!

Therefore, this lunch morphed into a lunch of delicious, autumn food items found in Trader Joe's October Fearless Flyer.


Today's Autumn Lunch consists of:
* Organic Applesauce Cups - a package of 4 cups comes in 3 different flavors - Regular, Cinnamon, or Wild Berries. $1.99 for 4 cups, which is pretty much the same price as other name-brand applesauce cups.

* Toscana Cheese with Cinnamon - It's back, albeit for a limited time! One of my absolute favorite cheeses. Here's how Trader Joe's describes it nutty flavor of aged Parmesan and the creamy texture of farmstead Cheddar, generously coated in cinnamon". Yum! $7.99/#, but it's usually around $5 for a wedge.

* Roasted Mashed Sweet Potatoes - Found in the freezer section, this little pucks of delightfulness turn into mashed sweet potatoes after a quick stay in the microwave. Delicious, easy and nutritious! $2.49/6 servings.

* Pumpkin Bars - These are like a Nutri-Grain or other fruit-filled cereal bar, except there is pumpkin on the inside! $1.99/6 bars, which is the same price (if not less!) than name-brand cereal bars. (I packed this bar as my kids' mid-morning snack.)

* Pumpkin Joe-Joe's - Oreo-type cookies and Autumn collide in these pumpkin-spiced cookies from Trader Joe's. $2.99 for a 10.5-oz box.

* Honey-Roasted Pumpkin Ravioli - these beautiful pockets of pumpkin and ricotta are sure to delight any pumpkin-lover!  $3.49/2 servings.

The Reality in our House: Last Lunch before Payday

Just so you don't think that lunches in our household include sparkly unicorns and shimmering rainbows, and other such magical stuff ... here's a look at the reality in our house sometimes. A packed lunch the day before payday, when the grocery money has almost run out. That's when lunches get "creative"!


Let's take a look at what my creativity formed into a lunch, shall we?
Half a blueberry bagel with butter.
Half a stick of string cheese - only had 1 left to divide between 2 children.
Cucumber slices - from the garden.
Broccoli florets - from the veggie drawer in the refrigerator.
Homemade applesauce - defrosted from the freezer.

Like I said before ... not everything is glamorous in our household, nor in our lunches. But balanced meals (albeit strange ingredients thrown together) ... yes.

So don't feel like you need to have uber creative or have a background in nutrition, in order for you to craft a fun lunch. Just look around your kitchen, and get to it!

Letter T Bento

Back to alphabentos ... Today is Letter T.

Here are the ingredients that I included in my Letter T Bento. Terra Taro chips. Foster Farms sliced deli Turkey. Tangelo sections. Tortellini. Toscana cheese. Tootsie rolls.


First, I prepped my food - cooking the tortellini, and separating out the Taro chips from the rest of the veggie chips. (Don't worry - we ate the remaining veggie chips for snack.)


I placed the tortellini into the Easy Lunchbox.


The Taro chips are placed into a separate container of the lunchbox, in order to keep the freshness. (Actually, here's a hint: I didn't place the chips into the lunchbox until morning. This action also keeps the veggie chips fresher.)


Small chunks of Toscana cheese (one of my favorites) fill up a silicone baking cup.


Thin slices of deli turkey are rolled up and secured with food picks.


Once the turkey roll-ups are placed in the other silicone cup, the juicy tangelo slices fill another compartment. A mini tootsie roll completes the Letter T Bento.


Begin thinking of the T ingredients that you could pull together for a Letter T Lunch, and check back on Thursday for a thorough list of healthy T foods.

Ultrasound Reveal and DIY Pics of "Baby Bee" Bento

On Monday, I showed you the lunch I made for the kiddos on Ultrasound Day. They were convinced that it was a girl. And they were right ... it's a GIRL!

We surprised them with pink donuts from TopPot (a local donut shop). "Pink" because that is how we told them "it's a girl!". Donuts because it was a celebration, and donuts are a very rare treat.


Here is how I made this "guess-the-gender" lunch.


I began with the following ingredients:
Hard-boiled eggs (not pictured)
"Blue for a boy" ingredients - blueberries and blue corn chips (Garden of Eatin' chips are DELICIOUS!)
"Pink for a girl" ingredients - red radishes and red bell peppers. (Naturally pink foods are rather difficult to come by, so I substituted red.)


After removing the shells, I rolled the peeled, hard-boiled eggs in yellow food-coloring, and then pat them dry with a paper towel.


Here's the dyed, hard-boiled eggs.


Once the eggs were patted dry, I added candy eyeballs and positioned a strip of nori (dried seaweed) as a bumblebee stripe.


One more nori stripe and sliced almonds as the wings, and the edible bumblebee is complete.



Moving on to packing the lunch: I began by placing several silicone baking cups in the lunch container as placeholders. I added blueberries to one blue silicone baking cup.


Red pepper strips filled in one side of the container.


Radishes fill in the space opposite the red peppers. And blue corn chips (so yummy!) get added to the other silicone baking cup.



Lastly, I placed the bumblebee egg in the small silicone cup in the center.
Now the "What Will Baby 'Bee'?" lunch is complete.

What Will Baby Bee???

Last Friday, my husband joined me on a trek downtown for my 20-week ultrasound. The kids were SO bummed that they couldn't skip school to come along. (They didn't know that was NOT even an option.)

Both kids were certain that this baby was a girl, but I told them that they'd just have to wait and see - it's a 50-50 chance. I packed them a cute lunch and a note in order to keep their anticipation peaked.


A play on words ... What Will Baby "Bee"?
Obviously, the blueberries and blue corn chips stand for a boy. The red bell peppers and radishes represent "pink" for a girl. The bumblebee is made from a yellow-dyed egg with nori stripes. Come back on Thursday to learn how to make it!

Back to School Bento

The day has finally arrived for our household ... I am sitting in my living room, writing this blog in peace and quiet ... the first day of school has arrived! And yes, of course, I sent my kiddos to school with an awesome lunch. This is a revisit to the one I made last year, but this time, I included a tutorial.


You might be thinking, "Great! But my kid started school a few days or weeks ago. I'm SO late to this cool lunch thing." My answer to that: Nope, you're not late at all. So you didn't present this lunch on the very first day of school. That's okay. Nothing is stopping you from surprising them with a funky lunch tomorrow or next week. Just think how surprised they would be! So follow along with my DIY lunch tutorial, get inspired and make a school-themed lunch soon.

 Here's what I started with:
A bag of Bugles.
White sandwich bread - we don't usually eat white sandwich bread, but in this case, it's necessary for the lunch.
Starbursts - must include at least 1 pink type in the bag.
Deli meat - or pbj.
An apple - for the stereotypical "apple for the teacher".
Veggies - not pictured.
Two-tone string cheese - technically, you just need the orange side, but I couldn't find any plain, rounded orange cheese sticks.


First to make the notebook paper sandwiches:
(1) & (2) Measure the size of your sandwich container. You don't want to make the sandwich and THEN have to cut it to fit.
(3) Cut the bread to size.
(4) Make sure the bread slice does indeed fit into said container, and that small fingers can reach in to grab it at lunchtime.


Next, creating the look of the notebook paper:
(1) I had to pull out a piece of notebook paper, to remember the direction of the blue lines vs. the direction of the red lines. :)
(2) Use a blue Wilton food-safe color markers (available at JoAnn's and Michaels, or online) to draw horizontal lines on the sandwich bread.
(3) Use the red marker to draw one red line down the left-hand side of the "notebook paper".
(4) I double-stacked two sandwiches in my kids' containers, so I made two "notebook paper" per child. 
(5) Not listed: fill the sandwiches with the desired filling. Today, I used ham and spinach.


For the pencil:
Lay out the cheese sticks. Pick the ones that are completely orange on one side. Since pencils are usually orange or dark yellow, we want the cheese stick to mimic that look.


To make the pencil eraser:
(1) From the Starburst bag, pick the lightest pink or red candies. I choose Watermelon and Strawberry.
(2) Unwrap the candy, and pull out a paring knife or apple corer.
(3) Center the apple corer over the Starburst, and push down through the candy. 
(4) Roll the Starburst circle on the cutting board to smooth out uneven edges.


To create the pencil:
(1) Gently push a toothpick into one one end of the cheese stick.
(2) Add Starburst eraser. I found it worked best to twist the Starburst onto the toothpick, rather than pushing it on.
(3) Using a paring knife, carve away a bit of the other end of the cheese stick, and add a toothpick.
(4) Gently place a Bugle onto the toothpick.


Using the black, Wilton food-safe marker, color the tip of the Bugle to resemble a sharpened pencil.


To assemble, simply place the notebook paper sandwiches into a lunchbox container, and place the cheese stick pencil on top. Add fruits and veggies of your choice to another container.


If you are a homeschooling parent or have toddlers and preschoolers at home, this lunch is easily adaptable to plate at the dining room table.

Seahawks Pre-season Games!

It's preseason game time in Seattle! On Friday, the "loudest fans in the NFL" gathered to cheer on the Seahawks, and another game is coming up on Thursday. In honor of the Super Bowl XLVIII winners, I am reposting my popular Super Bowl bento lunch. Enjoy!


First, I made a bed of rice as the backdrop for the bento. Although I neglected to include it in the picture, I tucked a condiment container of soy sauce into the lunch, as flavoring for the rice. (If you put soy sauce on the rice too early, it soaks in, creating soggy, mushy rice. Adding soy sauce to the rice right before you eat it ... perfection.)

Broccoli resembles the grass of the football field, while sticks of cheddar cheese form a goal post.

The football is made from whole wheat quesadillas, cut into football shapes. I drew the 'laces' on the football quesadillas with a black food marker.

In order to create the famous "12" sign with food, I utilized blueberries as the background. Next, I cut peeled jicama into 1/2"-thick slices, and cut out the #12 with cookie cutters. (In case you weren't aware, the Seahawks consider their (loudly exuberant) fans "the 12th man" of the team, hence why there are "12" flags flying all over Seattle.)

For dessert, I added a few Skittles to honor the Seahawks' leading rusher Marshawn Lynch. Legend has it that when Marshawn was playing football as a preteen, his mama used to give him Skittles before his games. The encouragement - in the form of "power pellets" - helped him to run faster and to play his best. Well, the Seahawks fans have run with that sweet memory, turning it into a shower of Skittles every time he scores a touchdown.

Trader Joe's Lunchable

It's back-to-school time for some; however, in our state, we've still got 2 weeks. But I decided that this lunchable is packable for school (for those who have started) or for the park (for those of us who are struggling through the last few weeks of summer).

One of my favorite stores is Trader Joe's. Not only are the employees friendly and knowledgeable, but the store is clean, well laid-out, and full of yummy things. My kids enjoying tagging along to look for the Octavia puppet (our store's mascot), which the employees hide in different places all over the store. Once they find her, the kids are given a sugar-free lollipop or a piece of fruit in exchange for Octavia's location. Today, she was on top of the mini chocolate biscotti.

In order to keep this lunchable simple, I popped into Trader Joe's to pick up a few remaining items to add to the other TJ's items I already had at home.


Here's my basic ingredients for today's lunch: Sesame Honey Almonds (protein). Extra sharp cheddar cheese (dairy). Sesame Sticks (grain). Sugar Snap Peas (veggie). Dried Mandarin Oranges (fruit).


After I trimmed the snappeas and cubed the cheese, I placed 4 silicone baking cups into a small, plastic container.


Cheese cubes go in one silicone cup. For aesthetic purposes, I made sure to NOT place the orange foods in the yellow cup. Orange and yellow would blend together too much, and I wanted to make them pop visually.


Diagonally across from the cheese, goes the other orange food - dried mandarin oranges.


Sesame sticks - my current craving - fill up another baking cup.


Sesame honey almonds, the protein component, complete the fourth cup.


Lastly, the deliciously crunchy snappeas get tucked in between the baking cups.


And voila! A Trader Joe's Lunchable that was easy, relatively affordable and involves no cooking!
